  • A bottled raw organic original kombucha tea.
  • A clean glass cup
  • A wooden spoon for stirring
  • White sugar
  • A organic black tea bag
  • A thin cloth or coffee filter and a rubber band.


  • Boil one cup filtered Water and add one organic black tea bag in a glass jar.
  • Add one and half table spoon white sugar. You can use cane sugar but by using white sugar can get better results. Let black tea cool down completely to room temperature. Use a wooden spoon to take off the black tea bag.
  • Pour raw organic original kombucha tea to black tea.
  • Cover the jar with coffee filter with a rubber band
  • Place the tea out of sun light at room temperature.
  • After a week, it is common to see a baby SCOBY developing across the surface of the liquid. A new SCOBY starts off as a clear film, then slowly become less translucent, more white, and thicker as time goes on. It will take 30 days to reach at least 1/4 inch  thick before to use it for brewing the first batch of kombucha tea.

Make kombucha tea with kombucha tea starter cultures(SCOBY)


  • A half gallon size  glass jar. Make sure it’s very clean. it’s better to wash with baking soda or vinegar.
  • A wooden spoon for stirring
  •  3 or 4 organic black tea bags ( you can use green tea)
  • 1/2 cup White sugar (ratio: 1 cup of sugar per gallon of tea)
  • a SCOBY and 1 cup of liquid from a previous batch of Kombucha
  • A thin cloth or coffee filter and a rubber band.


  • Boil filter water. Combine hot water, tea bags and white sugar to dissolve. Make sure to leave a couple of inches of room at the top of the jar.
  • Let tea completely cool down to room temperature.
  • Remove tea bags with a wooden spoon.
  • Add an active kombucha SCOBY.
  • Cover the jar with coffee filter and secure with  a rubber band.
  • Put the jar in the corner of kitchen counter ,out of direct sunlight.
  • let it sit to ferment about 7-10 days. The longer the kombucha ferments, the less sweet and more vinegary it will taste.
  • Pour kombucha  into smaller glass bottles and refrigerate it. Retain the SCOBY and enough liquid from the bottom of the jar to use as starter tea for the next batch.

When the  fermentation process happens, you will notice that the SCOBY disk “grows” a second SCOBY disk, also called baby SCOBY. You can actually use the newly formed baby SCOBY to create a  new batch of kombucha. You can pass on your extra baby SCOBYs to your friends. The mother SCOBY can keep fermenting new kombucha batches for about another month after its first use but will then become inactive and should be thrown away.

  • stay away from all grains,  especially ones that contain gluten like wheat(bread, cereal, pasta, pizza, cookies, crackers, cakes, muffins contain wheat).Gluten is hard to digest, pierces holes in our gut lining and partially digested protein and fat can seep through your intestinal lining, making their way into your bloodstream and causing an allergic response. Cut grains and legumes(including Rice (white & brown), oats, corn AND beans, lentils, peas, peanuts, spelt, hummus and soy. temporarily.  Once your gut is healthy, you can add back in grains that have been fermented and sprouted to eat occasionally. Fermenting and sprouting grains reduces phytates and lectins, making these foods easier to digest. Try to consume coconut flour and almond flour which are gluten free and good for your gut.
  • Add healing foods to your regular diet. Bone broth:  Chicken or beef bone broth contain collagen and the amino acids proline and glycine that can help heal your damaged cell walls. I usually make chicken bone broth every week. It really help heal leaky gut and skin rash.
